FRIDAY FAVES // ANKLE BOOTS

So I'm on the hunt. I want to find a great fall boot. I've tried in the past but I haven't found "the one". But this year I'm determined to cash in my birthday moola for the perfect ankle boot.

Here's what I've found so far...

Ahhh, those Steve Madden ones are quite fierce, I just may have to run into Town Shoes to see if they carry them!

It's Friday...hoooraaay! Do you have any big weekend plans? James and I are heading up island with some peeps from our church for a little worship retreat. Another #imwiththeband trip for me :) But I'm excited to hang on a lake with amazing peeps and enjoy one last weekend of summer of bonfires and tanning (it's going to be 25 degrees, that's still summer to me!!)

ROASTED YAM AND GARLIC SOUP

So I made you something tasty AND healthy. Yes, healthy!!! I first made this soup a few years ago when I was doing the Daniel Fast. I felt like I was dyiiiing and I needed something to fill me and that's what this soup did. Oh and it's also gluten free, dairy free, sugar free and all that jazz ya know. Yaaa, girl, it's healthy and soooo good. 

It's the perfect soup for those grey fall days (yes, I'm over summer). A perfect Saturday afternoon activity.

ROASTED YAM AND GARLIC SOUP

Ingredients:

  • 6 cups vegetable stock
  • 3 large yams
  • 2 garlic bulbs
  • 4 tomatoes
  • 2 red peppers
  • 2 tbsp vegetable oil
  • 1 medium yellow onion, diced
  • 2 tsp salt
  • 3 garlic cloves, minced
  • 2 tbsp minced sage
  • 2 tbsp minced oregano
  • 2 tsp ground coriander seeds
  • 1 tsp ancho chile powder
  • pinch allspice
  • 2 tsp chipotle puree (I pureed one can of adobe chilles!)
  • salt and pepper to taste

Directions:

  1. Preheat oven to 375. Wash yams well then poke a few holes in each one with a fork. Cut off the tops of the garlic bulbs, drizzle with olive oil, and wrap in tinfoil. Place yams and garlic on a baking tray and roast for about 45 mins. The yams might need longer than this, but you'll want to take the garlic out. When the yams are tender, cool slightly and remove skins. Squeeze flesh from the roasted garlic bulbs.
  2. Halve and seed peppers. Place peppers and whole tomatoes on an oiled baking tray and roast until the skins begin to puff and brown (about 15 mins). Transfer to a bowl and cover with plastic wrap for 10 mins. Peel away the skins and set aside.
  3. Heat vegetable oil in a large soup pot. Add onions and saute until translucent. Add garlic, spices and herbs and cook until the garlic is golden. Stir in the peeled, roasted vegetables (you might want to chop them up a bit too), the stock and the chipotle chiles. Bring to a boil, reduce heat and simmer for 20 mins.
  4. Puree the soup until smooth. And then eat it up!
  5. Enjoy!

P.S. Sorry for the no post on Monday. Work has been full (but AWESOME), I've been studying for my Pneumatology midterm & other exciting things which I can't talk about yet...(not pregnant, ha!)

POINT NO POINT


For our two year anniversary, James and I headed west to Point no Point. Even though Point no Point is located just over an hour away from Victoria, you really feel like you're another world away. The resort is made up of private cabins and duplexes. Each building is right on the ocean and each unit has a private hot tub on the deck.

We spent A LOT of time sitting in that hot tub listening to the waves crash on the shore below...ahhhh. We also spent a lot of time eating. Our cabin came with a full kitchen so we brought a good supply of food up. We also spent a lot of time NOT ON OUR PHONES! Point no Point has no wifi or cell phone service...it's kinda surreal. It felt so good to detach and connect with James with no distractions.

Hope you have fantastic weekend! Mine will be spent running, studying and hanging with friends. I heard it's supposed to be pretty hot, so I'll definitely try to soak up some sun!!!

SNEAK PEEK OF LIIRA'S NEXT SINGLE

A couple weeks back we celebrated two years of marriage at Point no Point. It's an insanely beautiful place and I can't wait to show you pictures of it tomorrow. When we were there we spent one morning filming some scenes for James's music project, LIIRA. The footage turned out reaaaalllly sweet and I cannot wait to watch the whole video and hear the completed song but until then I have a sneak peek for you...

AUGUST FAVOURITES

I'm in denial.

Summer can't be over...can it?

And I've been trying.

I've had three (YES, THREE) pumpkin spice lattes so far.

I even went into Artizia and stroked their cashmere sweaters.

No dice, friends. Summer is still on my heart.

August is over and September is here. I just have to accept it.

But oh, how August was a gooder.

I went away a bunch, had my anniversary and birthday AND RACHEL AND JASON GOT ENGAGED!!!!!!! (Yes, I will be blogging every single detail of their wedding, so get pumped!!)

Throughout the mayhem of August, I did manage to blog on a small scale...(Hopefully Fall will be more regular!)

In Bikini Bridges & Kicking Self Loathing to the Curb I did something really scary. I opened up and told you all about my struggle with self loathing. And you guys were SO SUPPORTIVE. It was my most popular post EVER. Thank you for all your kind comments, messages and blog link ups. It made me cry...and realize how important it is to be vulnerable.

 

2. WARDROBE // 6

Wardrobe // 6 was your second favourite post. Mountain top fashion with my mountain top love.

 

3. PARKSVILLE

I went to Parksville with my besties and had way too much fun. We ate a lot of food, watched a lot of Veronica Mars and laughed A LOT.

 

4. TWO YEARS

James & I celebrated two years of marriage on August 24th. I got all sappy and showed you way too many wedding pictures.

 

5. WHISTLER FAMILY VAYCAY

I had the pleasure of going to Whistler with James' famjam. It was my first time to Whistler and it won't be my last. Stunning mountaintop adventures and great family times.
