PUMPKIN SPICE SNICKERDOODLES
i have a couple problems. 1. i really love baking. 2. i really love eating baked goods. so my way of doing what i love but not gain100 lbs, is baking and then letting other people eat the goods. when i brought these to our incredible set-up team at church a few sundays ago, they ate them up literally in a very short time period. (i swear i only ate two!)
it was my first go at snickerdoodles and i have no idea why. they are an incredibly easy cookie to make and an even easier cookie to consume.

pumpkin spice snickerdoodles
ingredients needed:
2 3/4 cups of flour
2 teaspoons of baking powder
1/2 teaspoon of coarse salt
1 cup of unsalted butter at room temp
1 1/2 cups (+ 2 tbsp of sugar)
2 large eggs
1 tbsp pumpkin spice (recipe)
1. preheat oven to 350. mix flour, baking powder & salt in a bowl. place butter & 1 1/2 cups of sugar into the bowl of an electric mixer (with paddle attachment). mix on medium speed until pale & fluffy. mix in eggs. reduce speed to low & gradually mix in flour.
2. stir 2 tbsp of sugar and pumpkin spice in a small bowl. roll the dough into a 1.5 inch ball then roll in sugar & pumpkin spice. place on a baking sheet that is lined with parchment paper.
3. bake cookies until edges are golden (12-15 mins). let cool on wire racks.
4. enjoy!

i’m currently wrapped up in blankets battling this stupid cold that came on last thursday. i’m the worst sick person because it’s really, really, really hard for me to sit down and rest. so i’m trying to rest but there are construction workers literally right outside our window (they’re repairing something on our roof so we won’t have any little critters in our walls this winter like we had last winter…). they’re talking very loudly and using very loud power tools and i can see them through the cracks in our blinds…oh joy..
so to distract myself from that i’m going to show you a few pics from the wedding we attended on saturday night! my long time friend, chris married his bible college sweetheart, kirsten. i’ve known chris for a long time. us and a few others had the privilege of being young 20 somethings friends immersed in church ministries & life adventures. we all shared many fun & crazy times in those days and i am so thankful that for the most part, we’re all still in touch and a part of each others’ lives.
a few of my fave memories of the day include: watching chris’ face as his bride walked down the aisle towards him & their future, ian’s best man’s speech (including us three performing the chicken snack rap!), catching up with lovely chelsea who lives up island, & sharing many laughs with old friends.
unfortunately (probably due to my foggy head) i didn’t get any actual pictures of the bride & groom. but their wedding had a hashtag so please go creep the pics of the beautiful couple on instragram (search #thekongs)
congratulations chris & kirsten!!! your day was incredible. so excited for what God has in store for you two!

we had a lovely time in vancouver (aside from me being mad sick). we stayed at our dear friends house who have the cutest 3 little kids. there’s something incredibly special about hearing little voices ask each other at 7am "should we go and wake aunty lauwa and uncle sames?" awwwwww. and it doesn’t help with the twins saying to us right before we were leaving "don’t go. don’t go." ahhhh, my heart. normans, we’ll be back before you know it!
sorry for my mad run on sentences today, my brain is a cloud and james is at school till 7:30pm so coco is keeping me company which i’m thankful for because she cuddles me but then i talk to her..a lot..and then i get scared that the construction workers outside my window can hear me and think i’m crazy……

HELLO FALL.
well it has definitely turned to fall this past week. you know how i can tell? our house is faaaareeeezzziiinngggg! as you know from a post in august, i absolutely love fall. so you won’t find me complaining here, no-sir-ee. bring on the torrential downpour. bring on the freezing mornings. bring on the stormy nights. and bring on a pumpkin spice latte while you’re at it.
it’s october 1st today meaning my personal spending budget has been reset for the month…boooya. james chooses to spend his personal spending on americanos + brickyard pizza. i prefer clothes. so tomorrow night, you’ll find me at forever21 updating my fall wardrobe…
here are a few items i’d love to put my paws on (maybe if i save a year’s worth of monthly personal spending i could afford that marc bag…lol)

this friday dreams will become reality.
a whisper that was spoken years before into a single heart will become a shout in the hearts of many.
my dear friends, ad & christina will be launching their business you & her. this dream first came to christina years ago. she heard of the fact that girls in africa were dropping out of school & were more likely to get raped due to the simple fact: they didn’t have underwear.
“Worldwide, statistics show that on average 155 girls in every village in Africa have dropped out of school because they cannot afford sanitary towels and underwear at the age of menstruation.” (Excerpt from Keep a Girl In School, April 2013) (from the you&her website)
lack of education leaves these young african girls vulnerable. they no longer are an asset to their family and many are forced to get married, find work, or sell themselves. many girls end up hopeless with unwanted pregnancies or even hiv.
now most people hear things and think "how terrible, i hope someone does something about that" and then go about normal life. but not christina. christina, a wife & mother of 3 (all under 4!!) felt led to do something about it. fast forward a couple years and here we are at three days before the launch of you&her.
before i get into the event i want to say that i really admire christina. her courage, her vulnerability, her passion. she has stayed obedient to what God has placed on her heart and that is something that is so admirable. i know God is going to bless you&her. He loves obedient hearts. but i want you to bless you&her. i want you to support it and pray for it and come out on friday!
so what is you&her?
you&her is a lingerie company, which proceeds from the product “you” will buy, go to producing underwear in africa which will go straight into the hands of “her”, the girls who are dropping out of school.
buying you&her underwear = empowering girls in africa to stay in school. girls stay in school and get education. girls no longer are hopeless. they have a chance to dream.
