HELLO WEEKEND


Happy Friday!! Wowza, this week flew by and now I'm in my 24th week of pregnancy!!! 4 more weeks and I officially enter the third trimester...ahhhhh!! June still feels like ages away so I'm not freaking out too much.

We have our girl's conference next weekend...ILLUMINATE! I'm so excited. It's going to be a crazy week but all the hard work will be so worth it.

This afternoon I'm heading to our church's Couples Retreat with my sweetheart! Looking forward to hearing from amazing speakers, spending a night in a wonderful hotel and hanging out with my love.

The cherry blossoms are blooming all over our city and spring is in the air....thank you LORD! Also driving home at 5:30pm and it's still light out...PTL! With Spring coming, I'm craving pastel lip colours...like this one and this one and ohhh I need a new one of this one as I'm almost totally out.

ONE WORD BREAKFAST 2016


one word breakfast

Last Saturday I had my annual One Word Breakfast (2015, 2014). It was a smaller crowd then usual but I was totally okay with that. I woke up early and actually managed to have everything ready before the girls came!!

I made these overnight waffles again and seriously, they were better than ever!!! They aren't sweet, which I love because I load my waffles with seriously sweet toppings. And the ones made near the end of the batch were perfectly crispy on the outside and soft on the inside! (anyone know how to make the entire batch like that??)

I kept the decor pretty simple...craft paper wrapping paper as a table runner, blooms of course and one of my Valentine's prints on each plate.

Besides stuffing our faces with delicousness, we also shared about our One Words for 2016. Because of the smaller group, we were really able to open up and encourage one another. My heart was soo full after! 

Oh and this year we had the cutest of guests...little sweet Finnley Mae...

Isn't she the sweetest?? Oh my heart!!!

MEYER LEMON SCONES


Meyer Lemon Scones

I'm still new to the scone baking business but it's a business, I'd like to grow in. Scones are pretty easy to make and are the best compliment to an afternoon cuppa! I saw this recipe and slightly adapted it. It was crazy easy and meyer lemons happened to be on sale...double win! 

Meyer Lemon Scones

If you're wondering what the heck a meyer lemon is, don't be ashamed! I only found out last year. Basically it's a mix between a lemon and a tangerine...not too sweet but not too tart....deliciousness. I used the rest of the bag to soothe my stupid cold that I finally have gotten over! (hurrah!!)

MEYER LEMON SCONES

Ingredients:

  • 3 1/4 cup flour
  • 1/3 cup sugar (and a bit more if you want to sprinkle some on top!)
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup cold unsalted butter cut into chunks
  • 1 cup buttermilk
  • 2 tsp vanilla extract
  • 4 meyer lemons, zested (you'll also need the juice from two of these lemons)
  • 2 meyer lemons, sliced very thinly
  • melted butter for brushing

Directions:

  1. Preheat oven to 425. 
  2. Mix the sugar and 1/2 the lemon zest. Rub together with your fingers so it gets all fragrant.
  3. In a large bowl combine flour, salt, lemon sugar, baking powder and baking soda. Grab a pastry blender or fork and combine the butter into the bowl. Keep cutting it together until it resembles coarse sand.
  4. Stir in the buttermilk, vanilla, juice from 2 of the lemons and rest of the lemon zest.
  5. Place the dough on a floured surface and knead.
  6. Divide the dough in half and form into two large circles. Brush the melted butter and then place the lemon slices on top. You can also sprinkle some sugar on top if you're feeling it! Divide the dough into six triangles (by slicing down the middle like a pizza).
  7. Bake the scones for 14-16 minutes until the tops are slightly golden.
  8. Enjoy!!

Do you buy something for your sweetheart for valentines? We don't get gifts for each other at Valentines but I did request a card and chocolate because pregnancy + chocolate = a dang good combo.
